Camp Recipe: Jello Cake!

Jello Cake RecipeEveryone has their Dining Hall favorites.  For some it’s chicken nuggets and tater tots.  For others its those amazing triple chocolate cookies, or Taco Salad Tuesday.  Long-time Pecometh Campers will know that Jello Cake is a 4th of July tradition at Camp.  

If you can’t be here to enjoy Jello Cake with us tonight, here’s a recipe for you to try at home (Adapted from a recipe former staffer Megan Baker got from her Grandma Baker).  Hope it brings back great memories of past summers at Camp!

Ingredients:

1 pkg.  (2-layer size) white cake mix

 

For Jello:

1 cup  boiling water

1 pkg.  (3 oz.) Red Jello

1/2 cup  cold water

 

For Topping:

One envelop of Dream Whip

1pkg of instant vanilla pudding

1 1/2 cups cold milk

Directions:

Bake cake as directed on package for 13×9-inch pan, and let the cake cool.  Then use a toothpick or fork to poke holes all over the top of the cake (about 1/2 inch intervals).

Prepare Jello by combining boiling water with gelatin mix and stir until completely dissolved.  Then stir in cold water.  (To do Red, White and Blue cake separately prepare a package of red Jello and one of blue.)

Pour the Jello mixture over the cake.  (If you are using two colors only use half of each, and alternate red and blue – if you pour both all over the whole thing you’ll end up with purple!)

Prepare the topping by combining Dream Whip, vanilla pudding mix and milk and mix on high speed until soft peaks form. Spread on cake, cool in the fridge until jello is set (about 3 hours).
